So to celebrate here’s a Paleo Taco Pie recipe.
2 cups almond flour
1/3 cup butter, or bacon grease,melted 1 tsp salt
Pie Filling Ingredients
1lb shredded chicken or cooked ground beef. I used chicken I had left over and shredded it with a fork.
1/2 onion, chopped (small bits, unless you are going to add it to the ground beef when you brown it)
1 red bell pepper, chopped
1to 2 teaspoon crushed chili peppers
Hot sauce to taste (I add a lot cause I like it SPICY with little regard for later ;-( ).
Salt & Pepper to taste
Garnish 1 Cup lettuce, chopped (optional not much nutritional value)
1 avocado chopped
Some chopped cilantro
Pie Crust Preparation:
In a large bowl, combine the almond flour, butter/bacon grease and sea salt. Blend together until it is all mixed and resembles dough. Transfer the dough into a 9 inch pie dish or put into a loaf pan, like I did. Press about ¾ of the almond flour in to a crust.Save the rest for the top.
Pie Filling Preparation:
Preheat the oven to 350 degrees. Mix the beef/chicken with chili pepper, red pepper, salt, pepper and hot sauce. Pour the beef/chicken onto the crust and place in the oven for 30 to 35 minutes.
Scoop out your yummy masterpiece to a plate or bowl and garnish with lettuce, avocado and cilantro and ENJOY!!
P.S. You could add small pieces of sweet potatoes to bulk it up a little, just make sure the pieces are small enough to cook in the 30 to 35 minutes or are already partially cooked.
